Hello, and Happy Sunday! Hope you guys are staying warm and well. I am writing to you as the Last Healthy Person Standing in the Ley home. 4/5 of us got taken down hard by a flu-like virus this week (on winter break, no less). Thank goodness my mom lives close by, because when she texted that she was bringing this chicken and rice casserole over (a family favorite I included in The Simplified Cookbook), I nearly wept with exhausted joy.
Tbh this week I’m feeling 42 (which is how old I’ll be on Friday!). Honestly I’d love nothing more for my birthday than for everyone to be on the mend and doing something quiet, like takeout and a movie, before I hit the road for The Simplified Cookbook tour. Because when your book birthday and actual birthday are only days apart, and then you get to hug precious readers on tour? It feels like you get to celebrate over and over again! That means I get to (need to??) budget my energy for all of these celebrations. 🤣
