I don’t know about you, but in this season of my life, I need stupid easy dinners. When I say “stupid easy,” I mean: under 5 ingredients, ready in under 15 minutes... FOR REAL. Nothing makes me close a cookbook faster than when something promises to be easy and simple, only to find the recipe calls for 15 things. This includes spices, people. Or chopping. No chopping, please. If you’re with me, you know.

So in honor of Launch Week at Simplified (AKA Our Super Bowl), I bring you 5 Stupid Easy Dinners. Use these to fill out a whole week. (And if you’re in search of more, try my Assembly Meals post). Side note: I need these types of meals so much in my life, particularly the semi-healthy, family approved, high-protein types (for a growing almost-teenager) I’m thinking about making these recipes round-ups a regular thing.

  1. French Dip Sliders: The Leys have a *thing* for french dips. And they’re remarkably brainless to make. Get roast beef from the deli counter (have them slice it thin). We like Boars Head. Throw a little provolone on there if you’re feeling fancy. Hawaiian rolls (we sometimes use the Hawaiian Roll sub buns for this, but usually the rolls). Make au jus dipping sauce with the au jus packet you can buy premade. Serve with whatever you have: fruit, chips, veggies. You do you.
